All of our Florida lobster tails are fresh then flash frozen. Florida lobster or spiny lobster, or Caribbean lobster as they are also called, can be thrown in just about anything. From macaroni and cheese, omelette, gumbos, lobster creole, and it tastes delicious. It's not far off from the taste of a crawfish, so its versatility in working within just about any recipe is its strong point. Generally speaking, spiny lobster tastes, well, it tastes like lobster, with medium sweetness and a bit on the firmer side. The best way to enjoy a Florida lobster tail, in my opinion, is to split it in half, put some salt, pepper and lots of butter and grill it on your BBQ or put it in the oven on broil. Delicious!!!
